The "Brewery Shelf" in the market on the 1st floor of GOOD NATURE STATION is a veritable "shrine of bacteria" that houses a carefully selected collection of fermented foods from around the country!
We run the restaurant together with Fermentation Restaurant Kamoshika, and share the wonders of fermentation every day.
In this corner, the "Brewery City Summer Festival," a regular quarterly event, will be held on June 21st!
This time, we will focus on Fukui, Ishikawa, and Toyama, under the title "Fermenting Hokuriku."

"Fermenting Hokuriku" Fair

We will introduce and sell delicious fermented foods that our buyer and Kamoshika found on their field trips. Fish sauce, pickled pufferfish roe, Heshikonare sushi, and "Batabata tea," one of Japan's four major fermented teas, are all available in Fukui, Ishikawa, and Toyama, making them the holy land of fermentation! We hope you'll find a product that's just right for you here♪

Based on Fukui's "Sauce Katsudon", we combined pork shoulder cutlet marinated in homemade onion koji with yellowtail fish sauce. We hope you'll feel the Hokuriku region with this burger.

Ms. Seki Megumi of Fermentation Restaurant Kamoshika, who traveled to Hokuriku in search of fermented foods, will share behind-the-scenes stories from her journey, and we will be holding a valuable talk show with Mr. Araki, the seventh generation owner of Arayo, who makes pickled fugu roe.
In addition, we will also be offering a "500 yen tasting menu" using fermented foods from Hokuriku that are sold in stores. Please come and experience a special day where you can fully experience the charm of Hokuriku while staying in Kyoto.

"Pickled fugu roe" is a forbidden delicacy that is only allowed in Ishikawa. This is a traditional technique that is said to miraculously remove poison and is full of the magic of fermentation. Mr. Araki has also been recognized as the first "World Heritage of Food" by Dr. Takeo Koizumi, a leading figure in the fermentation world.
