[RAU] The only Japanese patisserie to receive an award in the restaurant guide "LALISTE"

Chef pastry chef Yusuke Matsushita and chocolatier Yukiyo Takagi of "RAU Patisserie & Chocolate" were selected by the French version of "LA LISTE", a restaurant guide announced in Paris, France on June 16th.
We received the "Pastry Discovery GEM Award" at the PASTRY AWARD 2025.
Of the 36 patisseries from 18 countries selected by the French edition of L'Aliste, this is the only Japanese patisserie to receive the award.

La Liste is a restaurant guide originating in France that is gaining attention as a guide on par with the Michelin Guide and the World's 50 Best Restaurants.
The Pastry Discovery GEM Award is given to patisseries from around the world that are "attracting global attention and worth the effort of visiting."

■RAU Patisserie & Chocolate

The patisserie and chocolate brand "RAU Patisserie & Chocolate" was launched in December 2019 at GOOD NATURE STATION in Kyoto, Kawaramachi, by two chefs, Chef Patissier Yusuke Matsushita and Chef Chocolatier Yukiyo Takagi, who both pursue original expressions.
The picturesque scenes that come to mind, the stirring memories that the scent evokes, and the emotions that poets of the past put into their waka poems.
They express these scenes in the form of sweets with great skill.
Currently, in addition to desserts, chocolates, and baked goods, the store offers gelato themed around aromatic ingredients.
You can experience all of the products at GOOD NATURE STATION store, which also houses a cafe and patisserie.

■Chef Profile

Chef Pastry Chef Yusuke Matsushita

Born in Toyama Prefecture in 1984. After training at patisseries and chocolateries in Tokyo, in 2014, at the age of 29, he opened Clame Elan, a restaurant offering assiette desserts as a course meal, which was not available in Japan at the time.
In 2016, he published the book "Hachette Desserts from Specialty Stores," which is sold in various Asian countries, including Korea, Taiwan, and China.
In 2017, he received an offer to become a chef pastry chef at a five-star hotel in Malaysia, and closed his own restaurant to broaden his knowledge.
In the same year, he received an offer for his current position and returned to Japan, traveling to South America and Europe with Takagi Yukiyo. He used these experiences to develop RAU's brand concept and products, creating unprecedented sweets.
He was also selected as a judge for the World Chocolate Masters '22, the highest international competition in the chocolate industry.

Chef Chocolatier Sachiyo Takagi

Born in Hyogo Prefecture in 1990. Influenced by his father, a baker, he aspired to a career in the food industry, and at the age of 17 he began his career as a chef at a French restaurant in Tokyo.
He gained experience in patisseries and chocolateries in Tokyo, and in 2014 he worked as chef patissier at Clame Elan, a specialty assiette dessert shop run by Matsushita Yusuke, who is currently the chef patissier at RAU, from the time it opened, before going on to work as chef patissier at a two-star restaurant in Paris.
In 2018, he was invited to return to Japan as the chef chocolatier at RAU, where he has been active in a wide range of fields, including not only brand concepts and chocolate development, but also product development in general.
In December 2021, she released her own brand, "Sachi Takagi."
Expressing the power of plants in the field of "confectionery," he is creating new types of confectionery that are completely plant-based.
She was the first Asian woman to be selected as the head judge at the World Chocolate Masters '22, the chocolate industry's highest global competition.
