Based on the concept of "giving form to scenes," RAU expresses landscapes seen in the past and imagined worlds through sweets using its unique sensibility.
Three desserts perfect for early summer—"Ame," "Sara," and "Bin Yellow"—will be available for a limited time.
▪Dessert "Ame"

<Almond/Rose/Vanilla>
Dessert with the theme of "a world wet with rain."
The rain falls on a stone town with a blue and green gradation.
The decorative flowers are deliberately dried, which represents the process of dryness becoming moist and life beginning to shine.
The inside is covered with yogurt and rose mousse.
From the bottom, layer almond biscuit, almond sable, almond sauce, and lychee jelly.
You can experience a world of radiant moisture from the ground to the surface.
Enjoy the delicate and beautiful scenery of a world wet with rain.

▪Dessert "Sara"

<Rhubarb / Hyuganatsu citrus / UMAMI>
A dessert themed around a "watercolor painting of umami" to be experienced on a plate.
One way of describing the broth used in Japanese cuisine is "a watercolor painting of umami," and that's where the idea came from.
When considering how to interpret "umami" in confectionery, by delicately layering colors (flavors),
I wanted to express the "umami" that arises from a Japanese interpretation, so I incorporated both Japanese and Western sensibilities to construct the flavor.
An original "UMAMI mousse" made with sun-dried tomatoes, grapefruit, and tea broth, rhubarb, tomato, and Hyuganatsu confiture,
This is a delightful dish with a variety of flavors layered together, including apple confit in sweet rice wine.

<Lemon/Mint/Almond Praline>
A dessert that captures the acidity, aroma, and even bitterness of a whole lemon.
The vibrant gradation of green and yellow expresses the ripeness and youthful freshness of the lemon.
The main mousse is made with plenty of lemon juice.
The inside is filled with fruity confit that retains the texture of lemon peel, and is accented with almond praline sauce.
You can enjoy the perfect balance of freshness from the fruit and richness from the dairy and nuts.
Lemon confit is made to express two different flavors: ripe and fresh.
We use confit cuts of different sizes and cooked to perfection.
