Fermentation Restaurant Kamoshika Autumn Brewing Market (Fermented Shikoku ~ The legendary fermented tea and delicious food of Shikoku ~)

GOOD NATURE STATION is holding a fermentation event called "Josuichi" four times a year in collaboration with the fermented food select Shop "Hakkou Shokudo Kamoshika."
This fall's theme is "Fermented Shikoku." We will be focusing on the "Shikoku Mountains fermented tea manufacturing techniques," which were designated a national intangible folk cultural property in 2018, and holding events and Shop on Saturday, September 21st to introduce the fascinating fermented foods and culture of Shikoku.
This is a great opportunity to experience the traditional fermentation culture of Shikoku in autumn Kyoto. If you have an interest in fermentation, please come along.

●POP UP sales and tasting corner for Shikoku's three major fermented teas
This is a corner where you can sample and purchase Shikoku's three major fermented teas (Awabancha, Goishicha, and Ishizuchikurocha). In 2018, these fermented teas were designated as intangible folk cultural properties by the nation as "Shikoku Mountains Fermented Tea Manufacturing Techniques." Please enjoy traditional fermented teas on the cool days of autumn.


Fermentation Shop held (free to participate)

① 13:00-14:00: Mini seminar and tasting of the legendary fermented tea
This is a mini seminar where you can sample Awabancha, Goishicha, Ishizuchi Kurocha, and Shimanto Black Tea while learning about the fermentation mechanisms and differences. Goishicha and Ishizuchi Kurocha in particular are extremely rare in the world, as they undergo two stages of fermentation: aerobic and anaerobic fermentation. Please enjoy learning about the profound depth of Japan's four major fermented teas, which are concentrated in Shikoku.


② 15:00-16:30: Seminar by Ishizuchi black tea producer "Toda Kumi" (Satsuki-kai) and tasting of the three major fermented teas
Mr. Toda will talk passionately about Goishi tea and Ishizuchi black tea, which have a fermentation process that is rare even on a global scale. Although the content is somewhat technical, please take this opportunity to enjoy the depth of this intangible cultural heritage.


Fermented burger sales start this fall

The "Seared Bonito Marinated Rice Burger" will be available from Saturday, September 21st. This dish is made by marinating seared bonito, which has been prepared using Kochi's traditional method of "hand-grilling in straw," and then aged brown rice to create a rice burger. Please enjoy the taste of autumn that fills your mouth, including autumn myoga and yuzu pepper from Kochi Prefecture.
