We continue to make miso using a method that focuses on natural fermentation, wooden barrel brewing, and handmade production.
Even the koji, the key ingredient in miso, is all handmade.
Everything from ingredient selection to temperature control is done by the fourth-generation owner, Masatsugu Kato.

In addition to traditional techniques for making miso, we will also introduce the wooden barrels that have supported Japan's fermented foods.

The large wooden barrel that has been handed down for generations was inherited from Sawai Soy Sauce.
